How to make your own self-raising flour.
Many recipes we are used to back home in the UK call for self-raising flour, in all my time in the Philippines I have not seen any self-raising flour. However, it is not a problem as self-raising flour is so easy to make.
Just add 2 teaspoons of baking powder for each 150g/6oz/1 cup all-purpose flour. Sift the flour and baking powder together into a bowl before using, to make sure the baking powder is thoroughly mixed or you can put both ingredients into a bowl and whisk them together.
Make sure that your baking powder has not passed its use by or best before date as baking powder if it is old you may find that your cakes don’t rise, also the humidity in the Philippines can make baking powder not work, so keep it in an airtight container.
